From My Kitchen to Yours...
Fresh Apple Cake with Creamy Dessert Sauce

Cool, short days and ripe apples coming from the local orchard brought to mind this delicious recipe to mind as I was driving home yesterday! It is very easy to make (especially if you have an apple peeler/corer) and only takes about 4 large Rome apples! Enjoy!

Fresh Apple Cake

4 c. peeled and sliced apples (Rome apples are good!)
2 c. sugar
2 c. flour
1-1/2 t. baking soda
2 t. cinnamon
1 t. salt
2 eggs
3/4 c. vegetable oil
2 t. vanilla extract
1 c. chopped pecans

Preheat oven 350 degrees. In a large bowl, stir together apples and sugar. Add dry ingredients and stir well. In a separate bowl beat eggs, oil and vanilla. Pour into apple mixture and blend until thoroughly moistened. Stir in pecans. Pour batter into a greased 13 x 9 inch pan. Bake 50 minutes or until cake springs back when lightly touched. Serve warm with Creamy Dessert Sauce. 12-15 servings.

Creamy Dessert Sauce

1 c. sugar
1/2 c. butter
1/2 c. half and half or evaporated milk
1 t. vanilla

Place all ingredients in saucepan and stir constantly. Bring mixture to a boil over medium-high heat and boil for 3 minutes. Serve warm over cake! Very Yummy!
